Shrimp Stock for Gumbo

Ingredients: Per 5lbs of shrimp

  • Shells/heads from 5 pounds of shrimp
  • 2 tbls lard
  • 1 medium onion, peeled, cut into eighths
  • 1 carrot, peeled, cut into ½-inch pieces
  • 1 celery stalk, cut into ½-inch pieces
  • 2 bay leaves
  • Two 1/4-inch-thick slices lemon
  • 2 smoked chilli peppers, coarse shopped
  • 6 sprigs fresh flat-leaf parsley
  • 2 sprigs fresh thyme
  • 1 teaspoon salt
  • 1 teaspoon black peppercorns
Directions

Melt lard in a stockpot over medium heat. Add all remaining ingredients. Cook, stirring often, 10 minutes. Add 4 quarts water, and cover; bring to a boil over high heat. Reduce heat to low; simmer, uncovered, 1 hour. Strain; discard solids.

Made 2 gallons of gumbo stock off the heads of 20 pounds of 10/12 shrimp. Shrimp are roughly 30% head and gut, 70% tail meat. So about to get busy on ~14# of shrimp meat.

Buddy works at the Alabama mariculture center and they've been doing research in techniques to grow 'farm raised' saltwater shrimp. By law they can't grow and sell to public but when they're done with all the measurements and research the shrimp gotta go. We get them at a nominal price that goes right back to the research center.

They've got it down to about one pound of shrimp food in, makes one pound of shrimp out. They realize 1:1 for farmed protein, that is stunningly good. These were grown from hatched shrimp eggs in 80 days.

The site below does a good job laying out the mariculture mission of the site where my buddy works.

The stats 14.2 & 13.5# snappers, 13# of filets and throats. Fish tacos are back on the menu.

Made an observation that my cleaning table really isn't too big 🙂. A good day.

Absolutely love this conservative area and the military history that is still being recorded here everyday .

Tyndal AFB
Eglin AFB,
Hurlburt AFB,
Pensacola NAS,

Today the local boys came home, picture today from the Pensacola Pier of Navy Blue Angels whose home station is Pensacola NAS about 20 miles from home (I didn't take this one). When in town they practice 2-3 times a week with the Pensacola Pier as their usual IP. Each practice a jet or two takes a couple low loops over East Bay Bayou - righteous noise. Bad time for Northern archers but the two-day Pensacola homecoming airshow runs Nov 3 and Nov 4.

A picture where you feel the jet noise.

Fish had lockjaw this AM before work.

Did catch and retrieve some.shark fisherman's flotsam. Since the big hoopa every pullout in the Gulf Islands National Seashore has had the guys looking for glory. Probably $120 worth of terminal tackle, line and leader got away from one of them. Its important to collect it if possible to keep sealife from becoming entangled and dying.

Navarre has made quite the splash in the fishing winter scene with the Balckfin Tuna run and now the second Great White in two years from the beach.

Water is 61° too cold for my offshore swimming PT and no desire to be a human popping cork for one of these beasts.

Will weigh when I clean her later. Want to chill it whole throughly so on 20# of cubes and 20# of block ice 🧊. Looked better then average not jumbo [>30#] my bet 27#.

42° air and 64° water.

First one ate a 1/4oz way back squid. Got to leader came unpinned - gonna swap the hooks for a set with bigger gape.

Second one on a deep diver x-rap bobo pattern. Single hook x 2 on it. Great Hookset, bleedin her out.

Ran three lines on both hits and was able to clear both rods then fight the tuna. Great bulldog fight on both today. I forgot my gaff so tail grabbed her and that was it. Prolly 20m hook to grab.
