Strouds '22 Food and attendance thread

As the title states, who is contributing what this year. Sounds like we have quite a few more showing up earlier than normal this year. Ill have quite a few plates, napkins and utensils that Ill be bringing along and can probably bring some pulled pork for a meal or 2. I wont be smoking them on site, but will be warming up over a fire.

Ill be rolling in on Sunday early afternoon on the 16th and will try and grab the same camper spot I had last year. Hoping we can lock down the same area as last year. These spots are 1st come 1st serve so we will see what happens.

Looking forward to seeing everyone again this year.

I'll be rolling in with my food truck...lol. Ribs for sure on Saturday, so I'll have my smoker & if anyone else wants to use it as well. Earlier in the week, I'll do chicken burritos / Kung Pao Chicken so however you wanna make up your dish. Another night it'll be something else really good. With the stores nearby, I'll have options for the remaining time.

I'd like to do a taco feed on Friday. I'll provide the meat and fixings, will just need a head count. I'm going to smoke a full deer ham barbacoa style.
Couple things: Have you done this before? What is your process for this? I have always wanted to try but don't want to waste the meat if I screw it up.

Also, I have got to get to this soiree sometime. Do you guys bring your kids? How old? I won't make it this year but damn I've got to make it sometime.

Yes, I've done it before. You can do it 2 different ways, each has its own selling point. You can smoke to an internal temp of 135ish, let it cool, then cut it into 1' cubes and toss in your favorite sauce/seasoning blend that fits this style of cooking. Or, what I do most often, is smoke to 145 as low and slow as I can, then move to a covered cooking dish and smother it in a sauce I make for the occasion, and simmer low and slow for several hours until it shreds like pulled pork. I prefer this method because it makes a better burrito IMO.

Yes, kids have and do attend. My 9 and 5-year-old daughters will likely be there with me on Thursday and possibly Friday this year.

Once again I’ll be bringing the big griddle with a focus on breakfast.
Bacon
Eggs
Hash browns
French toast/pancakes/butter/syrup
Milk/OJ

I also have some sausage patties I’ll be bringing; others have contributed sausage in the past and welcome again.

The griddle will be available for other’s use for burgers/perogies/stir fry/etc

I’m also bringing my dutch oven with this intention: one big pot of cowboy beans and trying more cobblers/cake thingees (last year turned out ok)

I'll do my usually wait and see what needs filled and do that.

It'll be myself and one kid again this year. Kody didn't like missing last year and Levi can't wait until he is 13 so he came come! I told my kids they had to wait till 13 to attend. I don't want anyone thinking they can't talk to them like adults. But the real truth is I didn't want to give up "my time" as I liked using these as vacations from being an adult myself. I remember these events now though🤣
