We do alot of stuff with deer. We don't buy meat at the store unless it's ribs or something I wanna smoke. Tacos roasts steaks. One of my kids favorites is deer heart. They eat it like it's going out of style my daughter knows what it is and it doesn't bother her at all. My wife on the other hand won't try it.

2. Elk Back straps (those don't come around often)
My recipe for roasted deer heart....
Fillet a deer heart, salt & pepper, stuff with swiss cheese or jack (if you like it spicy), add a couple chunks of raw bacon to the ventricles, roll it up and skewed with presoaked toothpicks, and wrap the external with a couple lengths of bacon.
Apply to a glass baking dish, cover with tin foil, bake at 400 for one hour.
or....wrap in tin foil and place on BBQ grill for 45 minutes at 300.
Remove, slice, and eat.
Mmm Mmm Good.
Beef noodles.
If we do a roast (which the kids don't particularly care for), we take any left over and shred it the next day and then boil it with eggs noodles and beef broth. We usually do enough to get an extra freezer meal out of it too. The kids love it!
