I may do a pork butt tomorrow. I can eat pulled pork by the truckload. So much stuff you can make with it also if you don't sauce some of it.
I don't sauce any of it. I vac seal leftovers with a little butter in it. Drop it in boiling water to reheat. Tastes like it just came of the smoker.

Pulled pork...

Sandwiches
Tacos
Enchiladas
Cubano
Etc...

yes, cutting perpendicular to the grain gives a much better bite. looks damn good, Joe. I might have to do another brisket this weekend. love them.

grilled pizzas last night. hand tossed artisan crust brushed with olive oil, fresh sautéed Chanterelles, home made parmesan sausage(aka "pizza sausage"), roasted sunset peppers, diced heirloom tomato, red onion, fresh grated romano/parmesan, fresh basil ribbons, fresh chopped oregano, and of course, mozzarella. we made four different versions. best one was loaded with everything, first one didn't last long enough to get a pic.

I'm not sure, but I may be on a binge. Cedar planked salmon. first time I've ever done it salmon this way, and it won't be the last.

Copper River Salmon, Jasmine rice, and the last of my fresh Chanterelles. any of you Salmon lovers out there who have not tried this, good lord don't put it off. super delish.

Copper River RED!!! Hard to beat that meat[emoji23]. That's a hard river to fish though. Lots of guys die every year dipnetting that one. Looks delicious!
