Recipe please

2lbs of Boneless Skinless Thighs

Marinade

1 large garlic clove , minced (or 2 small cloves)
1 tbsp ground coriander
1 tbsp ground cumin
1 tbsp ground cardamon
1 tsp ground cayenne pepper (reduce to 1/2 tsp to make it not spicy)
2 tsp smoked paprika
2 tsp salt
Black pepper
2 tbsp lemon juice
3 tbsp olive oil

Yoghurt Sauce

1 cup Greek yoghurt
1 clove garlic , crushed
1 tsp cumin
Squeeze of lemon juice
Salt and pepper

Mix the marinade and put it in a freezer bag with the chicken. Hold in fridge for up to 24 hours. I usually do it before work and the cook after. Sear or reverse sear until the chicken has an internal temp of 170ish. You want a decent amount of char as the spices really click with it. Eat with Naan bread or pitas (I made my own NAAN and it rocked, plus naan is expensive), lettuce, tomato, and red onion. The yogurt sauce is great. You can substitute sour cream and see which you liked best. It was half and half for us. We liked all but some preferred sour cream based. Yogurt is the best ;)

My wife and I tend to suffer terribly from "cabin fever" every winter. Today it's called "seasonal depression"; but regardless of the term used to describe it, the effects are very real in our house. We hope moving to a larger domicile prior to next winter will relieve of us of some of the effects, but until then, we've decided to take steps to avoid any real issues this winter. One of the things I've promised to do more often is cooking more homestyle meals that require the use of my dutch oven. Because I work from home when I'm not traveling, this provides a nice break from the daily grind and makes the house smell good for the afternoon session of calls, emails and grind!

Today is the perfect day kick things off with one of my all time favorite meals. Gives me something to look forward as I go back to my dungeon, I mean office...

Little request from the wife. Backstrap in a nice gravy built from sautéed onions and shittake mushrooms in butter and beef broth with egg noodles folded in. Paired with a good beer, cottage cheese and some warm sourdough bread. Meal that'll stick to your ribs!
