I was craving an omelet...kinda turned into this. I didn't have any mushrooms though, so I'll have to do it again, lol.

Brown sugar and salt cured 10# ham with a Dijon and brown sugar glaze whole being smoked with maple for late Easter with my family.

Honestly it was as good as commercial but a decent amount of work. Going to save it for those super special occasions.
