Not sure if I posted this yesterday or not...home made tortilla chips and salsa.

Pretty easy and we normally make them over a campfire or grill. Take corn tortillas spray them down with Pam or olive oil and sprinkle down with Adobo seasoning. Cook till nice and crunchy, dip away or just eat plain. I prefer mine with a jar from the garden.

We did this batch in the oven and precut them this time. It still worked but not as good as over a fire. Kids love making them and eating them! We’ve also made them with seasoning salt, Tony’s and garlic salt, Adobo is what we always go back to.

grilled chicken salad. we eat it probably once a week. grill a mess of boneless chicken thighs ( I season with my home made "Emeril's Essence" as I like it better than Tony's or other Cajun spice blends), make a nice salad with leaf lettuce, arugula, spinach, grape tomato, shredded carrot, chopped bacon, cukes when in season. sprinkle on some shredded cheddar and diced chicken. ranch or bleu cheese dressing best topping for this. I make sandwiches out of cold leftover chicken thighs sliced thin, piled on a bun with some lacey swiss, mayo, and lettuce. sometimes a couple slices of bacon, at which point it becomes a chicken-bacon club. excellent sammie for hungry painter or squirrel hunter. :smile:

We did the salad tonight and smothered the chicken thighs in Texas Pete for us adults. Damn good meal!!!

happy you like it. easy, delish, good for you. really nice in the summer when we have lettuce, spinach, tomato, cukes from the garden. to take it a step further, Nancy makes ranch dressing from scratch, and it's better than anything we've bought. same with zesty Italian dressing, taco seasoning, and other stuff. making stuff like this at home eliminates the HFCS, preservatives, colorings and other stuff we don't really need to be eating. tailor it to your own taste, too.

We make more then your average here at home. She made that sauce for the lasagna out of the canned tomatoes from two years ago. We also do our own taco seasoning. Ranch should be on that list...might just make that happen.

Want another impressive dip?

1 cup of mayo
4 tablespoons of yellow mustard
2 Tablespoons of Dijon mustard
4 tablespoons of honey
1 tbsp of lemon juice

Mix and chill.

Tonight my kids will try beef and noodles for the first time. Thanks for the inspiration here fellas, I’ll report back after it goes down. So far, everyone thinks it smells great!

Tuna noodle casserole was my favorite growing up. Real simple recipe:

1 bag egg noodles
2 large cans of cream of chicken or (if the kids like) cream of mushroom soup
2-3 cans of drained tuna fish (less if they aren't fond of tuna fish)
bread crumbs or crushed corn flakes

Cook the noodles til they are soft but not quite done, they will cook longer when you bake it.
Mix the noodles, soup and drained tuna in a large 2 qt. casserole dish or large enough cake pan.
You can add some bread crumbs to the casserole and mix in.
Cover the casserole with a coating of bread crumbs or crushed corn flakes. You can also add parmesan cheese if you like.
Put in the oven 350 until the bread crumbs are browned nicely.

Fuggin hated that stuff! Had to eat it though or I didn't eat at all. To this day I will not touch it lol

One of my favorites, my wife refuses to make any casserole. So we don’t eat them. She keeps her paws outa my tool box and I stay outa her kitchen.

I love tuna casserole. But I also love Chicken casserole made the same way, but I add a bunch of Franks Red Hot and use Ritz for the topping
