Kid friendly meals

We do alot of stuff with deer. We don't buy meat at the store unless it's ribs or something I wanna smoke. Tacos roasts steaks. One of my kids favorites is deer heart. They eat it like it's going out of style my daughter knows what it is and it doesn't bother her at all. My wife on the other hand won't try it.

Jesse fried some up at a Stroud’s gathering and it was really good.

According to my son (9) his favorite meat is:

1. Deer Heart
2. Elk Back straps (those don't come around often)

My recipe for roasted deer heart....

Fillet a deer heart, salt & pepper, stuff with swiss cheese or jack (if you like it spicy), add a couple chunks of raw bacon to the ventricles, roll it up and skewed with presoaked toothpicks, and wrap the external with a couple lengths of bacon.

Apply to a glass baking dish, cover with tin foil, bake at 400 for one hour.

or....wrap in tin foil and place on BBQ grill for 45 minutes at 300.

Remove, slice, and eat.

Mmm Mmm Good.

Beef noodles.

If we do a roast (which the kids don't particularly care for), we take any left over and shred it the next day and then boil it with eggs noodles and beef broth. We usually do enough to get an extra freezer meal out of it too. The kids love it!

I'll have to try that. Most of the time I just fry them up in stir fry sauce and butter.

That’s a good idea, I’ll have to do that with leftovers next time.

home made tomato soup and grilled cheese.

if you have a submersible blender and 30 minutes, you can make sensational tomato soup from scratch, and better still if you have your own home canned tomatoes. my grilled cheese isn't individually wrapped processed cheese food slices on buttered white bread any more, either. more likely smoked cheddar, jumpin' jack, and American with a couple slices of bacon and some caramelized onions or thinly sliced home made venison summer sausage on home made bread. traditional poor college student dinning taken to a whole new level. endless possibilities. is all my wife could cook when we met. :smiley_coolpeace:

For this of you that like roasts and the kids may not be to keen on the idea, take a turkey injector and inject them with a marinade that they do like. Makes for a really great tasting meal.

Mac and Cheese...

16 ounces of your favorite noodle. I like penne for this as it holds more sauce. Cook the noodles last and make sure to cut the time short by 25%.

List of ingredients for the sauce:

Pound of bacon, regular cut
1 Large onion, white
4 forks of pickled jalapenos
8 cloves of garlic
16 ounces of cheese. Buy the blocks and grate yourself. I prefer Sharp and Mild cheddar.
8 TBS of Butter
8 TBS of flour
6 cups of half and half (you can use whole milk if need be)
4 TSP of Paprika
2 TSP of Black Pepper
1 Tsp of salt
2 ounces of any shredded cheese (I use whatever is in the fridge usually)

Optional...if you have any brisket, pork belly, pulled pork laying around use it to mix in at the end before baking/smoking.

Instructions:

Sauce...On medium heat.

Fry bacon until crispy (not burnt) set aside to dry
Dice nad cook onion unitl carmelized in the bacon grease (drain off most of the grease, only need like 2 TBS of the grease)
Add pickled jalapenos (I dice them first. If you have a vagina just use a can of green chiles)
Add garlic and cook until tender (about 2 minutes)

Set this mixture aside.

In large pot...on low heat...
Melt butter
Add flour to the butter once it is melted
Let that cook for about 5 minutes on low heat. Takes the grittiness of the flour out. Called a rue.
Start adding the milk/creamer a little at a time (1 cup at a time works). It helps to have the milk/creamer heated a bit in a sauce pan before adding.
This will thicken. Let it go until it is about the consistency of a latex paint. This is called a bechumel.
Once thickened a bit start adding you cheese a bit at a time. This will get it to thicken more. Shredded melts faster than cubed, but you can cube if you'd like.
Add the paprika, salt and pepper. Stir well.
Finally add in the bacon and onion/pepper mix cooked previously.

Sauce is done. Cook your noodles and drain. Combine. Then put it all in a baking dish. I like the foil toss aways if your going to smoke. Sprinkle with the shredded cheese from the fridge. In the oven at 350 until it starts to brown on the top (20 minutes will work). In a smoker or grill is my favorite. Just don't let it go too long. It will get more casserole like if you do. Still great but not as creamy.

So I finally tried this Grilled Chicken Salad. It is Really Good and much better than it sounds to someone unfamiliar with it. Lets just say I'm glad there is more chicken salad left! Thanks Jamie!
