Went to Krogers early Saturday morning and grabbed a pork loin, 2.5 #'s. Sunday I got the grill started around 9:30 or so. Went inside and opened the pork loin to discover there were 2 of them in the package. Bonus!! So I wrapped one in bacon and seasoned it with Rufus Teague BBQ Rub. The other one just got the seasoning. I put them on the grill and inserted the probe into the bacon wrapped pork loin. This is the first time Ive used the probe, I think it is off by about 15 degrees. Within an hour the temp of the meat had jumped from 54 degrees to about 136 degrees. I grabbed another probe and placed it in and it read 120 degrees. I went inside and made the peach glaze. When the loin got to about 130 degrees I added some glaze and left it in the grill. At 140 degrees I added more glaze. At 145 degrees I took the loins out, wrapped them loosely in foil and let them rest. The wife made baked taters and baked beans. I unwrapped and sliced the loins, PERFECT. Had a nice smoke ring and were juicy. Knowing the wife probably wouldn't like it b/c of the smoke, she tried it, I was right, she didn't care for the smoke flavor. More for me. Im happy with my purchase. Im going to be testing the probes tonight in boiling water to see how they react. Ive already contacted Maverick about the probes, they said to send everything back and they would replace it. We will see what happens after I test them. Heres some picture for those of you I don't have on FB or Instagram.

Smoked some ribs at Moms house yesterday. Bought 3 racks, trimmed them a bit covered in worcestershire and rub.

The two at the top were rubbed in Rufus Teague BBQ rub. The one at the bottom was rubbed in Everglades Cactus Dust

I put them on the grill for 3 hours.

After the 3 hours I took them off, the one rubbed in Everglades was covered with butter, honey, brown sugar and Sweet Thai Chili Sauce, wrapped in saran wrap and then wrapped in foil. The other 2 were put in foil with a little bit of apple juice. Put them back on the grill for 2 hours.

When I took them off the grill, the one in saran wrap went straight back on, no foil, no sauce. One of the other racks was covered with Sweet Baby Rays, and the other rack was covered with Neals, a local BBQ joint. They stayed on for about another hour. I took them off and cut them up. Man they were fuckin delicious.
