That's what I do since the question was about getting it through the night to get to the processor the next day. I lay mine on a tarp in my building, stuff the chest with ice and lay a small bag of ice between the back hams. Never had any issues doing this. I only cut my own deer up when it's cold out and I can let them hang for a week. Otherwise, they go to the processor.
