You said it, with low angle is the way to go. Another way to think of it is eye level, but same thing. Couple other things to think about are lighting, background and quantity. Pay attention to the lighting, are you in bright light with lots of shadows? If so move into the shade, re-position, or wait until later to take pics in better light. The first and last hours of daylight are the best. Background; look beyond the animal and check your surroundings. Choosing a nice background in the field looks so much better than the back of a truck in a Wendy's parking lot. Also, try and take pics before field dressing big game. The body positions better and gives a full size appearance. Plus it just looks better than a bloody, open cavity. Lastly quantity; take 10 pictures to get 1 good one. We've all got digital cameras now so fill up your memory card and just delete the ones that don't come out to your liking. Try multiple angles, positions and poses and take a ton of pictures. You won't be sorry.
