This is about as close as I can come to the real thing. Nothing compares to real Jamaican jerk chicken from a street vendor in Jamaica, but this is damn close.
1/4 cup ground allspice berries (key ingredient)
1/2 cup packed brown sugar
6 to 8 garlic cloves, I use minced jar garlic
4 to 6 Scotch bonnet peppers, seeded and cored (wear gloves!)
1 Tablespoon ground thyme or 2 Tablespoons thyme leaves
2 bunches escallions (green onions) chopped up
1 teaspoon cinnamon
1/2 teaspoon nutmeg
sea salt and black pepper to taste
2 Tablespoons soy sauce to moisten
1 white onion
a few tablespoons of vinegar and a little bit of water.
Cut everything up and put it all in a pot and cook it down over medium heat until the peppers and onions get soft. Let cool and put in a blender or food processor and puree, chunky style. DON'T use your wife's smoothie blender! This shit is HOT so if you can't take the heat, use only 1 or 2 scotch bonnets. I used eight. Marinate your meat at least overnight, preferably longer. Deer steaks become unbelievably tender.
