Wild turkey is notoriously easy to make tough and dry .

My 2 favorite ways to enjoy my spring bird follow

1 Get some sort of mesquite marinade and let one of the birds boneless breasts soak a day or two . Place it in a crock pot and cook it till it shreds . Break it up and mix with sweet baby Ray's BBQ sauce . Put it on a good bun , and make sure ya top it with some coleslaw . Simple , easy , and delicious.

Chunk the breast meat into nuggets and soak in milk . I use Cajun fish breading , but Andy's red is good too . Fry it till done . It's really great with pepper gravy to dip it in.
If ya want to make it Buffalo style mix spicy brown mustard and Red hot 50/50. Dip it in that , then roll it in breading and fry .

The legs and thighs will need to be boiled until ya can get the meat off the bone . Then either make noodle soup , or mix it with gravy and put it on mashed potatoes or biscuits

Slice each breast half across the grain about 1/2" thick. Soak in Carribean Jerk Marinade for 45-60 minutes (Or longer). Cook on the grill.
