I was cleaning up some camera memory cards today and ran across the bull pictures of the butcher my brother and I did in January 2013. I had setup a time lapse camera also but the damn thing didn't take any pictures and that was a disappointment.

Yep it was a 6 day job. We cut up the over 50 lbs. back strapes and ground 500 lbs. of lean hamburger. Estimate live weight was 1500 lbs. He was a 50-50 Polled Herford and Scotish Highland. The Scotish Highland breed is what they call a Old World breed as it hasn't been hi-bred into a beef animal. They store their fat on the outside of the meat like a deer or elk. Lean eating.
