White Fish Chowder

Here is the recipe for the chowder. I don't follow measurments, so do what you think looks good.

1/2 cup onion
1/c cup clam juice
1/2 cup white wine
2 cups heavy cream (heavy whipping cream is what I use)
Butter. I added an entire stick to my pot.
4 tbsp. olive oil
8 oz. fish chunks
2 tbsp. flour
1/4 cup scallions
fresh garlic cloves to taste
1/2 cup cubed pre-cooked potatoes (I prefer red skins, skins on)
can of minced clams optional
shrimp optional
add whatever sounds good. You can't mess this up.
salt and pepper to taste.

Heat olive oil in your pot.
Add onions and garlic and cook a bit until they start to get translucent.
Add flour and mix until the flour absorbs the oil.
Add the clam juice and wine a beat for a few minutes. Don't stop or you'll get lumps.
This is what they call a rue.
Add the cream and bring to a boil while mixing.
Add your fish and scallions and clams or other goodies including the butter.
Boil and mix until the fish is cooked.
Let cool and enjoy.

I would like to go on the record as being the first say "this chowder is the bomb!" That was one of the best fish chowders I have ever had and thanks for posting the recipe. I will definitely be stirring this up for the wife to try.

Thanks guys. Mine was not thick enough this time. It needed more flour or crackers.

This was a little outta my comfort level food wise and I absolutely loved it. What a great meal for a cold, rainy Sunday and then snag a nap!!!

This was good eating Mike, thank you for sharing the goods! My mouth is still torched from Saturday night trying to eat it too fast.

Whelp, I am going to give this stuff a try this weekend. I will stick with Mikes recipe, but I will use bluegills in place of the Walleyes and " hen of the woods" in place of the crabmeat. It should be the cats ass!
