Dutch Oven Duck.

With a lot of our members out killing ducks I figured I'd share one of my favorite recipes. Time to get out those dutch ovens. mischeif.gif

Ingredients:
1. 2 boneless duck breasts;
2. diced onions, celery and carrots;
3. cooking oil;
4. 1 can of sauerkraut;
5. 1 cup orange juice;
6. 1/2 cup bourbon
7. Salt and pepper. or dry rub (i used a dry rub for chicken.)



Directions:
-Score your duck breast with a knife
-rub the dry rub in on both sides of your duck breast.
-Place your prepare duck breasted into a COLD very lightly oiled dutch oven.
-brown duck breasts with the lid off. This shouldn't take long leave the duck very rare.
-place browned duck breasts, diced onions, celery and carrots, sauerkraut, orange juice, and bourbon in the duck oven.
-fire your dutch oven to 350-375 and cook for 3 hours.
enjoy.

I found this recipe online a few years ago and changed it a little bit.

Dang Tom, I just had the Dutch Oven out on Sunday. I'll post up my attempted roasted duck in a day or so. Never did a whole bird, so decided to give it a try.

This recipe looks great, I look forward to giving it a try!! Thanks for posting it.

Yea no problem good luck. I have a goose recipe but I have not gotten to hunt geese this this year. I hate posting recipes without pictures.
